Meat (Chicken, Beef, Pork) Curry: Serves 6-8

Boneless meat-2 lb, Curry Powder-4 tbsp, Sliced onion-1 large,
Chopped ginger-3 tbsp, Chopped garlic-3 tbsp, Oil-1/4 cup, Chopped tomato-1 cup, Hot water-1 cup, Coconut milk-1/2 cup,
Chopped Cilantro-2 tbsp, Curry leaves-optional Saute onion, garlic & ginger in oil until golden brown.

Add curry powder, curry leaves & tomato; fry well and then add meat. Pour hot water & salt to taste, cover & simmer until meat is cooked. Stir in coconut milk, bring to boil & garnish with Cilantro. Serve with Kerala Curry Chutneys or Curried Lemon.

   
         
                     
     

Mutton (Lamb) Curry: Serves 6-8
Mutton-2 lb, Curry Powder-4 tbsp, Sliced onion-1 1/2 lb, Chopped ginger -3 tbsp, Chopped garlic-3 tbsp, Oil-1/4 cup, Cumin powder-1 1/2 tbsp, Hot water-1/2 cup, Coconut milk-1/2 cup, Yogurt-1 cup, Tomato/Cilantro-(optional)

Fry half of the onion in oil until golden brown & remove the onion. Fry mutton on low heat stirring frequently until brown. Add remaining onion, garlic, ginger, cumin & curry powder and saute well. Add hot water, yogurt & salt to taste, cover & cook until meat is done. Stir in the coconut milk, bring to boil & garnish with fried onion, chopped cilantro/tomato. Serve with Kerala Curry Chutneys.
